Ya, making the spells do something similar to the name of it will make it even better.
Like undeath to death could be a negative damaging spell and so on.

I am not sure if I like this idea.
Dispelling is already rather broken, and adding more dispelling and counterspelling may have severe balance issues and consequences.
At least, more specific game rules would have to be listed for this idea to even be considered.
It's not dispel - it's dismissal. Dismissal removes Conjures, since we are changing conjure spells into conjure aoe's.. we can change dismissal into a save against the new conjures. In order to make the spell useful, gust would have to have no effect against the new conjure spells.
How could you not like it? You outlined in your spells that gust of wind would work against those spells. Gust is auto removal of EVERY aoe in large area - no save. Dismissal would have a save. Dispelling isn't broken. Only AoE dispel is broken.

All spells have a counter, this is it's counter. With of gust of wind ineffective against the new conjures, Dismissal will have a use vs the new conjures. That's it's use.
If someone has one of the new conjure spells in the middle of the playing field, opposing team could cast Dismissal to remove it quickly and remove it's effects from the field. (Just like gust of wind vs SoV/bbs/etcetera).

1. Many spells have counterspells. And for most spells, you can use that spell either via counterspelling (which is broken) or simply to cancel a spell in effect (like haste cancels the effects of a slow spell).
2. Dismissal is listed as a counterspell against many of the summoning spells we are talking about in this thread.
3. If we change the summoning spells to something else, they would still be listed as Conjuration spells in the 2da-file and also have the same counterspells for the same reason.
4. If we for example change Summon Monster III to an exact copy of Fireball, a Dismissal spell could be used as a counter spell incorrectly.
What you suggest is to change the Dismissal spell (and possibly Gust of Wind) to ensure a new spell of isn't cancelled or countered by an incorrect spell. You want to add a save to make it interesting and not inherently broken.
